This delicious chocolate and date loaf cake is a great healthy replacement to an indulgent chocolate cake. Quick and easy to make, but what the most important it tastes amazing! Another delicious Sunday Bake-off recipe.
CHOCOLATE & DATES CAKE
180g spelt flour
100g coconut sugar
100g porridge oats
150g pitted dates
1 tsp bicarbonate of soda
1 tsp ground cinnamon
2 tbsp cacao powder
450g coconut milk
handful of walnuts for topping
Preparation – Thermomix:
Preheat oven to 180°C and line a bread tin with paper.
Place flour, sugar, oats, dates, bicarbonate of soda, cacao powder and cinnamon in mixing bowl then mix 10 sec in speed 6.
Add milk and eggs then mix 15 sec on reverse speed 3.
Scrape down sides of mixing bowl with spatula then mix again 15 sec on reverse speed 3.
If necessary, finish mixing by hand with a spatula.
Pour mixture to the tin, top with walnuts then bake for 60 minutes or until cooked through and golden brown.
Recipe is for Thermomix users, but as every one of my recipes, you can do it in any kitchen robot.
