Delicious and healthy carrot and courgette cookies
Cookies are my go-to snack recently. These delicious and healthy carrots and courgette cookies are great midday day treaty or a breakfast ob the go.
CARROT & COURGETTE COOKIES
Ingredients:
120 g cut in pieces carrots
80 g cut in pieces courgette
100 g spelt flour 180 g oat flakes
40 g honey
50 g coconut sugar
20 g coconut oil
30 g desiccated coconut
70 g mixed fruits
2 tsp baking powder
1 pinch fine sea salt
2 egg
Preparation – Thermomix:
Preheat the oven to 170°C and line two baking trays with baking paper.
Place courgette and carrots in a mixing bowl and grate 6 seconds in speed 6.
Scrape down the sides of the mixing bowl with a spatula.
Then add flour, oats, honey, coconut sugar, coconut oil, desiccated coconut, mixed fruits, baking powder, salt and eggs then mix 10 seconds in reverse speed 4.
Place 2 heaped tablespoons of mixture on the prepared baking trays, leaving approximately 2 cm between each.
Bake for 14 minutes (170°C) until lightly golden.
Leave for a few minutes on a baking tray then transfer to a wire rack to cool completely.
Serve or store in an airtight container for up to 3 days.
