Another delicious and sweet breakfast idea
Or maybe an afternoon tea? Those below recipes are a great and healthy alternative to fruity scones and full of sugar blueberry jam. Amazing for a breakfast, snack or even afternoon tea.
Courgette Scones
Ingredients:
150g spelt flour, plus extra for dusting
150g cut n pieces courgettes
40g coconut oil
1½ tsp baking powder
pinches of fine sea salt
15g honey
50g dried fruits
1 beaten egg for brushing
Preparation – Thermomix:
Preheat the oven to 210°C and line a large baking tray with baking paper.
Place courgettes in a mixing bowl and grate 4 seconds at speed 4.
Transfer to a bowl and set aside.
Place flour, coconut oil, baking powder and salt in a mixing bowl then mix 5 seconds at speed 6.
Add reserved grated courgettes, honey and mixed fruits then mix 40 seconds in a kneading mode.
Tip out onto a floured surface and bring together into a 2 cm thick disc, be careful not to overwork the dough.
Use a round cutter to cut scones into dough, then arrange on a prepared baking tray and brush with beaten egg.
Bake for around 12 minutes in 210°C until lightly golden then transfer to a wire rack to cool.
Serve warm or at room temperature.
Blueberry and chia jam
Ingredients:
500g fresh or frozen blueberries
30g lemon juice
100g coconut sugar
4 tbsp chia seeds
Preparation – Thermomix:
Place blueberries, lemon juice and coconut sugar in a mixing bowl.
Place Varoma dish without Varoma lid in place of measuring cup on mixing bowl lid and cook for 15 minutes at Varoma temperature and on speed 1.
Take out varma dish from mixing bowl, set again for an additional 10 minutes at Varoma temperature and speed 1, then add chia seed slowely through whole in the lid. Place varona dish on.
While jam is still warm, pour into warm meadium glass jar with screw-top lids, leave approximately 5 mm on top.
Make sure that the rims of the jars are clean and close immediately then turn jars upside down for 10 minutes before turning right side up and leaving to cool.
Serve or store in the fridge for up to 10 days.
Tip: if you like your jam sweet, I would recommend to add additional sugar (50-100g). To my taste is enough, and I tried to make it a healthy alternative to a full of sugar blueberry jam. I hope you enjoy it.
