Anyone fancy a slice of an apple cake?
Quick and easy cake recipe for Sunday morning bake-off. I like to bake on Sundays and it’s a kind of a tradition now that most of my Sunday mornings I spend in the kitchen. Nothing is more relaxing than baking, don’t you think. And on top of that, we always have something sweet in the house that day.
300g apples, without seed nests (120g cut into 2mm slices, 180g cut into pieces)
4 large eggs
80g coconut sugar
220g gluten-free self-raising flour
2 tsp of gluten-free baking powder
1 tsp ground cardamom
1 tsp cinnamon
1 pinch of salt
15g of almond flakes (optional)
Preparation – Thermomix:
Preheat oven to 180°C and line a loaf tin with baking paper.
Weight 120g of apples cut into slices then put aside.
Place 180g of apple pieces in mixing bowl then chop 3 seconds at speed 5, then transfer to a bowl and set aside.
Place eggs, coconut oil, sugar, flour, baking powder, cardamom, cinnamon and salt in mixing bowl then mix 8 seconds at speed 4.
Add previously grounded apples, then mix 10 seconds at speed 3.
Transfer to prepared tin and arrange apple slices over the top, overlapping them slightly then sprinkle with almond flakes and cinnamon.
Bake for 55-65 minutes in 180°C until golden brown and a skewer inserted in centre comes out clean.
Allow to cool in the tin for 10 minutes before removing to a wire rack to cool completely.
It’s a Thermomix recipe, but you can use any blender or kitchen robot to mix/chop ingredients.
