Another Sunday morning well spent. Baking is my kinda therapy.
Did you know that baking is good for your mental health? Making threats in your kitchen can do more than just create yummy comfort food. Baking has been found to have therapeutic value which helps to ease anxiety and even depression. Baking is not only meditative but also stimulates the senses, it’s nourishing, creative and makes other people happy.
Today, I’ve got for you another simple and delicious carrot cake recipe. Hope you enjoy!
CARROT CAKE
Ingredients:
230g cut in pieces carrots
3 medium eggs
80g coconut sugar
1 tbsp coconut oil
1 tbsp cinnamon
100g almond milk
1 pinch fine sea salt
200g self raising gluten free flour
30g raisins
30g pecan nuts
Preparation – Thermomix:
Preheat the oven to 180°C. Grease a small cake tin and sprinkle with breadcrumbs.
Place carrots, sugar, eggs, flour, coconut oil, almond milk and salt in a mixing bowl and chop 20 seconds on speed 6.
Add raisins and pecan nuts and mix 15 seconds on speed 5.
Transfer dough to the prepared cake tin and spread on top a handful of chopped pecan nuts.
Then bake for 60 minutes in 180°C. Cover with kitchen foil half way through and continue bake until the skewer inserted in the centre comes out clean.
Leave cake to cool in tin for 10 minutes then remove and transfer to a wire rack to cool completely.
Recipe is for Thermomix users, but as every one of my recipes, you can do it in any kitchen robot.
