Who doesn’t love Pancake Tuesday?
Here we have another Shrove Tuesday, the day before Ash Wednesday, also known as the 1st day of Lent …and we celebrate today by eating pancakes.
But this year I have for you something different and much healthier but the same tasty as traditional pancakes. I am serving you Green Smoothie Pancakes this morning – fluffy, delicious, and full of goodness. Inspired by a recipe on a Cookidoo Platform, but I decided to made it as healthy as possible without adding additional refined sugar. I hope you enjoy it!
Here’s the recipe below:
GREEN SMOOTHIE PANCAKES
Ingredients:
1 large banana cut in pieces (approximately 130g)
50 g fresh baby spinach
130 g unsweetened almond drink
3 dates
150 g buckwheat flour
2 medium egg
1 tsp baking powder
1 pinch fine sea salt
sliced banana, maple syrup, mixed nuts or any other toping
Preparation:
Place 1 banana, spinach, dates and almond drink in mixing bowl then mix for 15 seconds on speed 6.
Scrap down, then add flour, egg, baking powder and salt and mix for 15 seconds on speed 4.
Set aside in mixing bowl to rest for 15-20 minutes.
Heat a non-stick frying pan over medium heat. Pour a small ladle of batter into the pan and fry for 2 minutes then flip over and cook for a further 1 minute. Transfer to a plate, keep warm and repeat with the remaining batter.
Serve pancakes with maple syrup, nuts and extra sliced banana or any other topping you like.
It’s a Thermomix recipe, but you can use any blender or kitchen robot to mix/chop ingredients.
