Delicious and healthy oat and dried fruits cookies
If cookies have oats they must be healthy, right? These delicious cookies are definitely a healthy afternoon snack, they are soft inside and little crunchy on the outside. Just perfect treat made in less than 15 minutes.
Flapjack cookies
Ingredients:
60g coconut oil
80g coconut sugar
1 egg
2 tbsp vanilla syrup
85g spelt flour
200g rolled oats
100g mixed dried fruits
1/2 tsp bicarbonate of soda
1/2 tsp baking powder
1/2 tsp cinnamon
pinch of salt
Preparation – Thermomix:
Preheat the oven to 180°C and line 2 large baking trays with baking paper.
Place coconut oil, coconut sugar egg and vanilla syrup in a mixing bowl then mix 1 minute on speed 3.
Scrape down the sides of the mixing bowl with spatula and repeat mixing for an aditional minute on speed 3.
Add flour, oats, dried fruits, bicarbonate of soda, baking powder, cinnamon and pinch of salt then knead for 20 seconds.
Form the dough into 12 equal balls – around 50g each. Place dough balls 5cm apart on prepared trays – 6 on each tray.
Bake for around 12 minutes in 180°C until the cookies are golden but still moist.
Leave to rest on trays for 5 minutes before transferring to a wire rack to cool completely.
This is another delicious Thermomix friendly recipe, but you can also use a hand mixer to beat wet ingredients together and then mix it well with dry ingredients by spoon.
