Let’s bring some sunshine to our kitchen!
I’m a sweet tooth girl, I love home-baked cakes, muffins, cookies and sweet treats. Some days I am so creative in my kitchen, others I enjoy a good chocolate bar. But a day without pudding is not a happy day, would you agree?
The weather in the UK was so miserable a few weeks ago, so I decided to bring some sunshine to my house and I’ve created Mango and Coconut Muffins. Definitely those fruits remind me of summer…
MANGO & COCONUT MUFFINS
Ingredients:
170g fresh mango
3 large eggs
100g coconut milk
3 tbsp melted coconut oil
60g unrefined raw cane sugar or coconut sugar
pinch of salt
200 g self-raising gluten-free flour
1tsp baking soda
50g coconut desiccated
10g mixed oats with coconut for topping
Preparation – Thermomix:
Preheat oven to 180°C and line a 12 hole muffin tin with paper muffin cases.
Place mango in the mixing bowl then pure for 10 seconds in speed 7. Scrape down with spatula and repeat.
Add flour, milk, coconut oil, sugar, eggs, baking soda, coconut desiccated and salt then mix 30 sec in speed 5.
Divide between prepared muffin cases then sprinkle over with oats and coconut.
Bake for 20-25 minutes in 180°C or until a skewer inserted in centre comes out clean. Leave in the tin to cool for 5 minutes then remove from muffin tin to cool completely on a wire rack and store in an airtight container until needed.
