Banana pancakes are good for everything
If you follow me on Instagram you should know that I am obsessed with porridge oats and I can create anything with old good oats. One of my favourite must make at least once a week breakfast is banana pancakes. Not only extremely quick to make but also delicious and filling at the start of the day.

Oats are a good source of quality protein, full of nutrients and high in fibre. They are rich in antioxidants that may provide various health benefits and they taste great too. I’ll not bore you with a long post about oats, but if you want to know more about their benefits check out Health Line website.
So here’s my recipe.
BANANA PANCAKES
Ingredients:
120g porridge oats
2 ripe bananas
3 eggs
1 tsp of cinnamon 1
tbsp maca powder
pinch of salt
Preparation – Thermomix:
Add all ingredients to the bowl then mix well on speed 8 for 30 seconds.
Let the mixture rest for 10-15 minutes then fry pancakes on a non-stick pan until golden brown on both sides.
Mixture makes around 12 pancakes (3 portions).
Please note I am using Thermomix with most of my recipes, but you can make that one easily in any blender. But Banana Pancakes with granola on top is simply a breakfast goal. So let me share below my quick and healthy granola recipe – ready in 30 minutes.
CRUNCHY GRANOLA
Ingredients:
300g plain porridge oats
100g grounded mixed seeds
50g mixed whole seeds
50g almond flakes
100g raising
150g mixed nuts
80g honey or coconut syrup
100g coconut oil
60g hazelnut drink
1 tsp ground cinnamon
1 pinch of sea salt
Preparation – Thermomix:
Preheat oven to 170°C and line two large baking trays with baking paper.
Place a large bowl on a mixing bowl lid. Weigh into bowl oats, nuts, raisins and seeds.
Mix together with a spatula then set aside.
Place honey or coconut syrup, coconut oil, hazelnut drink, cinnamon and salt in a mixing bowl then heat for 5 min in 37°C on speed 2.
Pour into dry mixture and mix well with a spatula.
Transfer to prepared baking trays and spread out evenly.
Bake for 20-25 minutes in 170°C, stirring every 5 minutes with a spoon so granola is evenly browned.
Remove from the oven and allow to cool completely on the baking tray.
Store in a glass jar until needed.
