We all should do things that light us up more often!
For me, this thing is baking, creating delicious treats and simply spending more time in my kitchen. That’s the reason you see so many bakes on my blog… but I hope you like them as much as I do.
Anyway, what’s bring you joy? Have you ever think about that? I promised myself to spend more time on things that light me up.
So today, as every Sunday I spend some time in my kitchen and I have for you two delicious treats made in Thermomix. First one is banana, mixed nuts and date loaf and second one are bake-free healthy truffles. I hope you enjoy those both recipes.

Banana, nut and date loaf
Ingredients
40 g coconut oil
50 g mixed nuts
50 g pitted dates
165 g raw almonds
165 g gluten free flour
4 eggs
250 g ripe bananas
40 g honey
1 tsp ground cinnamon
1 tsp baking powder
1 extra banana cut in half for decorating
Preparation
Preheat oven to 180°C. Line loaf tin with baking paper and set aside. Place mixed nuts into mixing bowl and chop 3 seconds on speed 5. Transfer into a bowl and set aside (leave separately a spoon of nuts on side for loaf topping).
Place dates into mixing bowl and chop 5 seconds on speed 7. Transfer into bowl with nuts and set aside.
Place almonds into mixing bowl and mill 10 seconds on speed 10.
Then add GF flour, eggs, bananas, coconut oil, honey, cinnamon, vanilla, baking powder, then mix 15 seconds on speed 5. Scrape down sides of mixing bowl with spatula.
Add reserved nuts and dates and mix 5 seconds on speed 4.
Transfer mixture into prepared loaf tin. Arrange banana decoratively on top of the mixture and add a spoon of chopped nuts.
Bake for 60 minutes in 180°C or until a wooden skewer inserted into the centre of the loaf comes out clean. Set aside to cool in the tin for 10 minutes, then transfer onto a wire rack to cool completely before serving.
Healthy truffles
Ingredients
30 g goji berries
300 g pitted dates
100 g porridge oats
100 g raisins
20 g quinoa puff
160 g almonds
50 g peanut butter
30 g coconut oil
20 g cacao powder
60 g sweet freedom caramel syrup or any other syrup
coconut desiccated
Preparation
Place goji berries in mixing bowl and grind 6 seconds on speed 10. Transfer to a bowl and set aside.
Place porridge oats, dates and almonds in mixing bowl and grind 20 seconds on speed 9.
Add cacao, peanut butter, oil, quinoa puff, caramel syrup and raisins then blend 30 seconds on speed 8 stopping to add 1-2 teaspoon water if mixture is too dry and not coming together.
Place mixture on to a plate and add goji berries, then mix all with fingers (mixing goji berries last by hand make them visible in the mixture).
Shape into approximately 20 balls then roll over coconut desiccated and place on a tray in the fridge until ready to serve.
