Walnut & sultana cookies would make your day happier…
Cookies are my weakness, I could bake them all the time for my healthy afternoon snack. These are extremely quick to make and they stay fresh for a good few days. I hope you enjoy.
WALNUT & SULTANA COOKIES
Ingredients:
100g walnuts
40g melted coconut oil
40g coconut sugar
110g self-raising gluten-free flour
10g cacao powder
2 large eggs
½ tsp baking soda
1 tbsp peanut butter
1 pinch fine sea salt
100g sultanas
100g rolled oats
Preparation – Thermomix:
Preheat the oven to 180°C and line two baking trays with baking paper.
Place walnut in a mixing bowl and chop 2 seconds at speed 4. Then transfer to a bowl and set aside.
Place coconut oil, sugar in a mixing bowl then mix 25 seconds at speed 4. Scrape down the sides of the mixing bowl with a spatula.
Add flour, cacao powder, eggs, baking soda and salt then mix 20 seconds at speed 3. Scrape down the sides of the mixing bowl with a spatula.
Add oats, sultanas and reserved chopped walnuts then mix 30 seconds on reverse speed 3. Finish mixing by hand with a spatula, if necessary.
Using wet hands, roll 2 tablespoons dough into balls then flatten each slightly.
Place on prepared trays spaced 5 cm apart.
Bake for 15 minutes at 180°C.
Leave on trays for 5 minutes then transfer to wire racks to cool completely.
Store in an airtight container for up to 5 days
Recipe is for Thermomix users, but as every one of my recipes, you can do it in any kitchen robot.
